A co-worker made this a few years ago…and it was amazing. I tried to make it at home, but must have used the wrong kind of tapioca…or she may have left out an ingredient (do people really do that?). It was rich, but the texture was so lumpy and weird that the kids wouldn’t eat it.
Then I tried it with only vanilla pudding – it wasn’t rich enough and seemed sort of slimy. That was okay by the kids, apparently, but I was not content.
I desperately want this to turn out well. It is so easy, and yet….it isn’t. I ’d like to come up with an adult version too. Courvoisier maybe?
Do you make any simple desserts like this? What are your tricks or secrets?
Orange Jell-O Salad
3 oz. package vanilla pudding (not instant)
3 oz. package tapioca pudding (not instant)
3 oz. package orange Jell-O
1 can mandarin oranges
10 oz. Cool Whip (small container is 8 oz. but I like to add a little more)
Pour pudding mixes into medium saucepan. Add 3 cups cold water. Cook until mixture thickens like pudding. Add orange Jell-O. Let cool. Add mandarin oranges and Cool Whip. Refrigerate.
